Cultivated with simple ingredients (organic tea and sugar, and water), the resulting kombucha, borne of the transformative powers of the SCOBY (symbiotic culture of bacteria and yeast) is the earthy process of fermentation which was an integral part of our great-great grandparents’ lives. The tiny biochemical factory which IS the SCOBY, produces valuable substances which become part of the kombucha: glucaronic acid, acetic acid, lactic acid, vitamins, amino acids and beneficial bacteria like Acetobacter and Gluconacetobacter.
